2.3.1 Alcoholic strength by volume (ABV analysis). For wines, current legislation provides for the possibility of using any model of distillation or steam extraction apparatus provided that they satisfy the following test: Distill a hydroalcoholic mixture 5 times in a row at 10% vol. After the last distillation, the distillate must have an alcoholic strength by volume of at least 9.9% vol, ie during each distillation a quantity of alcohol greater than 0.02% vol must not be lost. For spirit drinks, the device must meet the following requirements: the distillation of 200 ml of hydroalcoholic solution, with a known title close to 50% vol. it must not produce an alcohol loss greater than 0.1% vol.

2.3.2 Volatile acidity. The EEC regulation does not prescribe a single type of distillation apparatus, but states that any apparatus or technique that satisfies the following 3 requirements constitutes an official international apparatus or technique. 1) The water vapor produced by the generator must be CO2-free. 20 ml of water are distilled by collecting 250 ml of distillate, adding 0.1 ml of 0.1 N NaOH and 2 drops of 1% phenolphthalein in alcohol: the color must remain stable pink for at least 10 seconds. 2) 99.5% of the acetic acid contained in a 0.1 M solution must be found in the distillate. 20 ml of 0.1 M acetic acid are distilled. 250 ml of distillate are collected and titrated with at least 19.9 ml of 0.1 N NaOH. 3) A maximum of 0.5% of a solution is found in the distillate 1 M of lactic acid. 20 ml of a 1 M lactic acid solution are distilled, 250 ml of distillate are collected and titrated with a maximum of 1.0 ml of 0.1 N NaOH.

The distiller will be delivered with an accessory kit containing the pipes for connection to the water (drainage):

The distiller should be placed at a level slightly higher than the sink where the drain pipe will be placed.
